Rajasthani Gatte ki Sabzi

Ingredients

Gatte

4 tsp Gram flour (Besan)
4 tsp Yoghurt (Curd )
1/2 tsp Chilli powder
¼ tsp Coriander powder
1/2 tsp Turmeric powder
1/4 tsp Coriander powder
1/4 tsp Garam Masala powder
 ¼ tsp Carum seeds (Ajwain)
Oil for deep frying
Salt to taste

Gravy

3-4 tsp Onion chopped finely
½ tsp Cumin seeds
1 ½  tsp Ginger and green chilli paste
1 ½  tsp Coriander powder
¼ tsp Turmeric powder
½  tsp Chilli powder
1 cup  Yoghurt (Curd )
1 large Tomato pureed
Garam masala 1/2 tsp
Pinch of Asafetida
Salt to taste


Method

Gatte

1. Mix all ingredients except oil for frying and make a tight dough by adding little water if needed.
2. Make cylindrical shapes and boil it in a water for 8-10 minutes.
3. Take out the cylinders and cut into small round shapes. Do not dispose the water used for boiling Gattas.
4. Deep fry till little brown and keep aside.

Gravy

1. Whisk yoghurt and add turmeric, chilli and coriander powder.
2. Heat the oil in a pan and add cumin seeds and asafetida and when cumin starts crackling add onions.
3. Sauté onion till little brown and add ginger-chilli paste.
4. Add tomato puree and fry for 5 minutes
5. Add whisked yoghurt and boil it for 5-6 minutes
6. Add Gatte and add reserved water and cook it again for 5-6 minutes on low flame.
7. Add Garam Masala and garnish your dish with coriander leaves.
